Cheese Ham Galette



Käse-Schinken Galette

Eine rustikale Pikante Galette mit Schinken, Basilikum, Kirschtomaten, Mozzarella und Cheddarkäse.
Ihr könnt auch einen Käse hinzufügen den ihr bevorzugt und den Knoblauch weg lassen,  sowie den Quark im Teig durch sauere Sahne ersetzen.

Zutaten
Für den Teig
85g Allzweck-Mehl
55g kalte Butter, in Würfel geschnitten
(Ich habe unsere gesalzene Goldenen Kuh Butter verwendet, das Salz daher übersprungen, wenn ihr ungesalzene Butter nehmt dann bitte ¼ Teelöffel Salz hinzufügen)
1 EL Quark
1 EL Zitronensaft
1 EL Eiswasser
Für die Füllung
3-4 Schinken in Scheiben
1 Eiweiß
2 EL Quark aufgehängt oder Sauerrahm.
6 Mozzarella Scheiben oder 35g geriebener Mozzarella
60g geriebener Parmesan oder einfach Cheddar
Eine Handvoll Basilikumblätter
4-5 Tomaten in Hälften geschnitten.
1-2 Knoblauchzehen
1 EL Olivenöl
Salz und Pfeffer zum Abrichten
Für Glasur
1 Eigelb mit 1 EL Wasser geschlagen


Vorbereitungen für Teig:
Mehl und Salz zusammen auf eine Arbeitsfläche sieben, Butterwürfel ganz kurz mit den Fingerspitzen in das Mehl einarbeiten, der Teig sollte noch krümelig erscheinen.
Quark, Wasser und Zitronensaft zusammen vermengen und mit einem Holz-Spatel unter die  Butter-Mischung mengen. Danach sanft  mit den Händen nur einmal oder zweimal kneten. Teig zur einer Kugel rollen, in einer Plastikfolie Wickeln und für 1 Stunde in den Kühlschrank legen.

Für die Galette:

Den Backofen auf 200°C Umluft vorheizen.
Quark (oder Sahne) zusammen mit Salz, Pfeffer, zerdrückten Knoblauch und Olivenöl vermengen und beiseite stellen.
Backpapier auf eine Arbeitsfläche ausbreiten und den Teig darauf  postieren
(ihr könnt den Teig auch auf der Arbeitsfläche ausrollen aber direkt auf dem Backpapier ist es einfacher um den Teig später auf das Backblech zu übertragen)
und zu einem 25cmØ Kreis ausrollen und mit dem Backpapier auf das Backblech ziehen.
Quark gleichmäßig auf den Teig verteilen, dabei einen 2cm breiten Rand lassen. Mozzarella über den Quark verteilen. Schinkenscheiben darauf setzen dann zerrissene Basilikumblätter und die Kirschtomaten und zuletzt den Parmesan darüber streuen.
Jetzt vorsichtig den 2cm Rand mit den Fingern über die Füllung falten. Den Rand mit dem verquelltem Eigelb und Wasser einpinseln.
Für 30-40 Minuten Backen oder solange bis die Teigkruste goldbraun und der Käse zerlaufen ist.
Die Galette vor dem Servieren für 5 Minuten auf dem Blech ruhen lassen, in Spalten schneiden und dann nur noch Genießen.

Chees-Ham Galette 

A rustic Savoury Galette with ham, basil, cherry tomatoes, mozzarella and Cheddar cheese.
You can also add a cheese to their preference and let the garlic away, and replace the cheese in dough sour cream.

For the dough
85g all-purpose flour
55g cold butter, cut into cubes
(I used salted our Golden Cow butter, so skipped the salt, if you then please accept unsalted butter ¼ teaspoon salt to add)
1 tbsp curd
1 tablespoon lemon juice
1 tablespoon ice water
For the filling
3-4 sliced ​​ham
1 egg white
2 tbsp hung curd cheese or sour cream.
4 slices of mozzarella or mozzarella or 30g grated mozzarella
60g grated Parmesan or Cheddar simply
A handful of basil leaves
4-5 tomatoes cut into halves.
1-2 cloves of garlic
1 tablespoon olive oil
Salt and pepper for dressing
For glaze
1 egg yolk beaten with 1 tablespoon water

Preparations:
The Dough:
Sieve flour and salt together, add butter cubes and blend in a processor only for a couple of times, the butter need not completely blend , preferably tiny cubes  should still be on and the mixture appear crumbly .
Mix curd, water and lemon juice together and add it to the flour and butter mixture. Use a wooden spatula to fold the dough to form a big lump. Gently knead just once or two times to roll into a round. Do not overwork on the dough. Wrap in a plastic wrap and put it in the fridge for 1 hr.

The Galette
Preheat the oven to 200oC. Beat the hung curd (or sour cream) and egg white together with a little salt & pepper and keep aside.
Burn the garlic cloves on a gas top, peel and crush with the olive oil using a mortar and pestle, and set aside.
Spread butter paper on your work surface, place the pastry dough over it (you can roll it over the work surface but doing it over the butter paper directly makes it easier to transfer to the baking tray later ) and roll into a 10” round. Transfer the base along with the butter paper on a baking tray.
Slather the hung curd evenly across the base leaving 2” border free. Spread the grated cheese over the curd base.
Pick each ham slice from its centre and drop, arranging on the top, then follow up with half of the torn basil leaves and the cherry tomatoes. Finally top up with grated parmesan and drizzle the entire garlic olive oil.

Now carefully pleat the free 2” border and fold over the filling, incorporating the entire filling together. Brush the Galette crust with the egg yolk and water glaze generously.
Bake it in the convection oven for 30-40 minutes; you’ll see the crust going golden and cheese puffing up. Remove add the remaining basil leaves and allow resting for 5 minutes before serving. Cut into wedges and enjoy.
